Tiramisu – a new version

We have a family tradition where the birthday star picks what they want to eat for their birthday menu.  On more birthday menu’s that I care to remember, Tiramisu has been the dessert of choice.  I have a tried and tested recipe that calls for savoiardi biscuits, sweetened coffee and yet more sugar in the egg mixture.  However this recipe from the Italian Food Safari television series on SBS calls for no sugar in the coffee ,1 cup of sugar in the egg mixture and pavesini biscuits.  It also uses 2 more eggs than my original recipe.  Even though essentially it’s the same recipe as my original one, i’ll be using it from now on because quite simply it’s better in flavour and texture.

Slut Red Raspberries in Sparkling White Grape Juice

You’ve gotta love Nigella Lawson; who else would be brave enough to name a dessert in such a saucy way.  My variation of Nigella’s Slut Red Raspberries in Chardonnay Jelly is a made with less sugar and  non-alcoholic sparkling white grape juice instead of  the chardonnay.  Even though the alcohol can be cooked out of this fabulously easy dessert I chose to substitute it with a non-alcoholic version as my miss17 doesn’t partake in alcohol at all.

Chinese Five Spice Panna Cotta – Easier than you think!

I love a good panna cotta…one that melts in your mouth.  One that you don’t have to chew like rubber LOL  This one fits my definition of a fabulously easy recipe to follow with great taste and texture to boot!

Woodfire Preserved Fig & Strawberry Jam Dessert Pizza

I LOVE pizza…yup…no two ways about it!  But in saying that I’ve got to make it clear that I won’t eat what’s served up at places like Dominoes and Pizza Hut etc!  The only pizza that i’ll eat that I don’t make myself is from Good Life Organic Pizza here in Adelaide.  They make divine pizza but they’re NOT cheap.  So, to satisfy my love of pizza, I’ve been making my own for a while now.  I bought a pizza stone to go in my gas oven and started trying different dough recipes.  More recently, I’ve been cooking them in our outdoor woodfire oven.

‘Pavalova’ Passion

My partner Mr Suziwongl, adores Pavlova, it’s his favourite dessert. So, with a glut of egg whites in my freezer, today is, as Mr Suziwong sometimes says, ‘pavalova’ day. My poor boy had to handle my emotional melt-down yesterday, so i figured he deserved a treat for dealing with the ‘worse’ in ‘for better or worse, in sickness & health’ etc .
 

Chocolate Raspberry Tart

This tart is a taste sensation! Seriously, it was a taste explosion from sweet to tart from tart to sweet. The dark chocolate pastry shell is dark bitter chocolate, then the chocolate confectioner’s custard is sweet then the raspberries on top are tart and then the raspberry coulis is sweet and the King Island Cinnamon Yoghurt sits somewhere between sweet and tart. My mouth is watering again while I’m writing about it….Good Lord it was awesome!!!
 

Scorched Almonds

I’ve decided that i need to make a great vanilla icream with scorched almonds but everytime i make these they get eaten before i get the ice cream made.
 

Strawberry Ice Cream is Yummy even in Winter!

strawberry icrecreamHere in Australia, it’s winter but even during winter I like ice cream. I just rug up when eating it! I made some chocolate ice cream the other day but I wasn’t happy with it. It set really hard and was icy when served. I’m careful to store my ice cream in air-tight containers. In fact i only store ice cream in glass loaf shaped containers so that there is no smell or taste residue from other food items.
During Easter my daughters spend a few days in Melbourne with their Langford Grandparents and their Aunty Hazel. Hazel is a great cook, without exception. Hazel sent the girls back on the plane with a container of chocolate ice cream that she had made. It was Awesome!!! So light and moussy and chocolately.
