Let me start by stating how much I hate winter. Just so you get it… I HATE WINTER
But one thing I do love about winter is a hot filling soup. Without doubt I like the slow method of cooking soup; making a stock, refrigerating it overnight, skimming and then finally putting all the other ingredients in. But there’s not always time to invest in the slow cook method and this is where this recipe comes into its own. You’ll have hot tasty soup on the table within an hour! My sister-in-law MissMedia shared this recipe and I’m thrilled she did because by no means is this quick cook soup a disappointment.

I hate winter, but I love winter food; especially soup. I have my mother’s classic chicken soup recipe and it’s awesome, believe me! This recipe from the June 2009 issue of Gourmet Traveller is pretty darn good and is simple to make. If you have chicken stock, chicken mince, garlic, onion, celery, angel hair pasta & flat leaf parsley, then you’re in business.

It’s a very clear soup; more of a
consomme. It has clean flavours and hits the spot for a light lunch or entre during
winter.

I don’t religiously buy Gourmet Traveller magazine. Usually I read it on a
Saturday morning at my local cafe when we have brunch to spend some time alone together (a weekly treat for two people with busy schedules). If I see lots of
great recipes that I’m likely to cook I go and buy a copy. I bought this issue without a second thought!
