A natural tart

This is the first time i’ve ever made short crust pastry…well actually the second. The first attempt is in the bin haha. I forgot to set the timer and it over cooked so it was like a frisbee. Oops.

The pastry was much easier to handle than I thought it would be.
It required a blind baking process.

I took the baking beads out and gave it a short time in the oven so the middle cooked. I poured in a lemon filling and baked it at a lower temperature.

This is the tart just after it had been cooling for a while and I had just dusted it with icing sugar.

This is the served up slice. It was delicious but needed to be chilled. We’ll have the rest for dessert tomorrow night when Chloe comes home for dinner.
