For the base of this delectible baked cheesecake you’ll need: butter, egg, caster sugar, plain flour self raising flour, good quality cocoa powder and the best part…dark chocolate
Combine the chocolate and butter in a microwave safe bowl.
Give it a good whisk to get all the lumpy bits out. Add the cocoa powder and give it another good whisk. Try HARD to resist the urge to just plunge your whole face into the bowl and take a slurp (i was good, i swear i resisted the urge; twas hard though 8-O )
Stir in the sugar, egg and flours and whisk like the beegeezers coz it will become really thick.
Spread this yukky looking glob into the base of a lined 23cm spring-form pan. I forgot to line my pan and I paid the price people…I’ll tell you about it later *sniffs*
Bake it in a 180 deg C pre-heated oven for 15 minutes without the fan (which is fabulous because i don’t have a fan forced oven). When it’s cooked set it aside and reduce the oven temperature to 160 deg C. Meanwhile gather up cream cheese, vanilla extract, eggs, caster sugar, plain flour and sour cream. Right about now you may or may not want to loosen your belt a bit…i just took mine off in defeat. Coz I know when I’m licked
Mix the cream cheese, sugar and vanilla. An electric mixer is the easiest way here, but if you don’t have one perhaps try the food processor with the plastic beater blade???? Add the eggs one at a time beating each well into the mixture before add thing next egg. Stir in the flour and the sour cream until just combined.
Pour the mixture into your LINED spring-form pan…silly silly me forgot to do this bit and the sides of the cheesecake stuck to the edge of the pan. Obviously as the cheesecake cooled it shrank. Because the sides were stuck to the edge of the pan, the cheesecake split to relieve the pressure. It looked the the Grand Canyon 8-O Lesson learned…note to self: Line the frikkin pan stupid!
Bake in the oven for one and a quarter to one and a half hours at 160 deg C or until a skewer inserted into the middle, comes out clean. Don’t be tempted to raise the temperature of your oven to get it to cook quicker because the top will brown rather deeply…Yes okay, i admit it! I got impatient and turned the oven up by 10 degrees and my cheesecake went very brown…note to self: follow the instructions stupid because they’ve been written that way for a reason.
