Slut Red Raspberries in Sparkling White Grape Juice

You’ve gotta love Nigella Lawson; who else would be brave enough to name a dessert in such a saucy way.  My variation of Nigella’s Slut Red Raspberries in Chardonnay Jelly is a made with less sugar and  non-alcoholic sparkling white grape juice instead of  the chardonnay.  Even though the alcohol can be cooked out of this fabulously easy dessert I chose to substitute it with a non-alcoholic version as my miss17 doesn’t partake in alcohol at all.

What you’ll need:

1 bottle of Henry Dawson White grape juice or any other non-alcoholic sparkling grape juice

300g raspberries – I used frozen berries

1 vanilla pod, split length-ways

5 gelatin leaves

200g caster sugar (this can still be reduced as the grape juice is quite sweet)

Double cream to serve – your favourite brand.

What to do:

Soak the berries in the wine for half and hour.  I put the in the wine frozen and let them defrost in the liquid.  Strain the juice into a small pot and keep the raspberries ready to put into compote bowls.

Heat the wine liquid with the vanilla pod until just boiling and then set aside for 15 minutes to allow the vanilla pod to steep.

Soak the gelatin leaves in cold water for about 5 minutes.

Remove the vanilla pod from the wine liquid and reheat the liquid and stir in the sugar until it dissolves.

Wring out the gelatin leaves and put into a large bowl.  Pour in a third of the wine juice and whisk it through until the gelatin is dissolved.  Then add the rest of the wine juice and stir it through.

Strain into a large measuring jug.  Place raspberries equally into flattish, clear glass bowls and pour the strained wine over the top.

All to set in the fridge for at least 3 hour but it’s best to leave them longer; overnight if possible.

Take out of the fridge 15 minutes before serving. 

Put the cream into a serving jug and leave on the table for guests to serve themselves.  The cream adds another dimension to the flavour and is worth the extra calories!

PS.  If you want to make the alcoholic version of this dessert use a bottle of chardonnay and use 250g of sugar.
