Are you looking for an interesting and incredibly tasty alternative to steamed rice to have with your curry? Have you thought about pulau rice? We call in pea rice…just one of those lazy family names!
Wash your basmati rice a few times to rinse all the starch away. Next mix through, cinnamon sticks, cardamom pods, peas, chicken stock cubes, ghee, cloves and curry tree leaves. Alternatively you can make 4 little bouquet garni bags filled with the cinnamon, cardamom, cloves and curry tree leaves. Just divide the ingredients equally into each of the bags. Tie the bags up and disperse them around the bowl. Add water and this is what you’ve got…
Cover with plastic wrap. Make sure to leave one area of the bowl open to let steam out while cooking. Cook on high in the microwave for approximately 12-15 minutes depending on your microwave. Mine takes about 14 minutes.
Make sure you pick out all of the cardamom pods, cloves and curry tree leaves or the bouquet garni bags before serving. Even though we traditionally throw all the spices in the bowl, I hate the picking out process so from now on I’m going to make 4 bouquet garni bags. Fluff the rice up and serve with your favourite curry.
